Salmon Patties

Here is another favorite recipe. 

Salmon Patties
 
1 can salmon, undrained
1/2 c. flour (use white rice flour to make gluten free)
1-1/2 t. baking powder
1/2 t. salt
1/8 t. pepper
1/4 c. cornmeal

1/4 c. milk
1 egg
1 T. lemon juice
1 T. dried onion flakes (optional)
1 T. dried parsley (optional)

Combine all ingredients.  Using a large spoon or ice cream scoop, form patties and cook in hot fat in skillet on stovetop.  Alternatively, preheat oven to 350 degrees F.  Spray a baking sheet with cooking spray and form patties on it.  Spray tops of patties with cooking spray and place in oven.  Turn patties over about halfway through cooking time.  The patties will not brown as well in the oven, but they are healthier.  For a more browned appearance, place the patties briefly under the broiler for the last few minutes of cooking.
