Easy Au Gratin Potatoes


There's nothing like warm, cheesy potatoes to satisfy a comfort food craving.  This recipe is super easy and a guaranteed crowd pleaser.  It can be doubled or tripled as needed to serve the crowd at hand.  The amounts below serve one to two.


Easy Au Gratin Potatoes

1 large potato, scrubbed
1 c. milk
1 T. cornstarch
1/2 t. salt
1/4 t. black pepper
2 T. butter
1/2 c. shredded cheese, divided



Preheat oven to 350 degrees F.  Boil the potato, whole, in water until fork tender.  Lift from water and let cool slightly.  At this point, you can choose to peel the potato if you wish.  I left my peeling on for the extra fiber it provides and because I like the taste.  Slice the potato thinly.
Grease a small casserole dish and layer the potato slices in it.  Dot with butter.
Whisk together the milk, cornstarch, salt and pepper and pour over the potatoes.  The liquid should come to the top of the potato slices.
Add a 1/4 c. of shredded cheese to the top.
Bake for about 25 minutes.  Pull out and add the remaining cheese.  Bake for another 5 minutes, until bubbly and cheese is melted and brown.  Let set for a few minutes to cool and allow the sauce to thicken slightly (if you can wait that long).  Enjoy!
Note:  For a quick supper, boil the potato in the morning while getting ready then refrigerate.  The casserole can be quickly assembled when you come home in the evening.
